She is currently an Adjunct Professor at the Federal University of São Paulo-Campus Diadema. She has published more than 30 articles in specialized journals and several works in event proceedings. She has experience in the field of Engineering and Food Science, working mainly on the following topics: bioprocesses, production and purification of bioproducts, nanoencapsulation processes, evaluation of bioavailability, thermal stability and antioxidant activity of bioproducts and natural extracts.

Graduated in Nutrition from Centro Universitário São Camilo - Campus Ipiranga (2002), specialization in Exercise Physiology from UNIFESP (2003), Ph.D. and post-doctorate in Science (Cell and Tissue Biology) from Universidade de São Paulo (2010). She is currently an adjunct professor at the Federal University of São Paulo (Campus Baixada Santista) and has experience in the field of Nutrition, with emphasis on clinical and sports nutrition, working mainly on the following topics: cachexia, nutritional supplements, training, protein synthesis, inflammation and cancer. Her current line of research involves nutritional strategies and dietary supplements involved in increasing muscle protein synthesis in pathological (cancer-associated cachexia and sarcoepenia) and physiological (resistance training) conditions.

Profª. Drª. ELIANE BERALDI RIBEIRO

 

Graduated in Biomedical Sciences (1981), Masters (1989) and Doctorate (1991) in Pharmacology from UNIFESP/EPM. She held a Postdoctoral Fellowship at Massachusetts Institute of Technology and Harvard Medical School (1991-1993). Since 1996 he has been a professor at the Department of Physiology at UNIFESP / EPM. She obtained the title of Associate Professor in 2004. She held the positions of Head of Discipline and Deputy Head of Department. She currently carries out administrative and management activities at UNIFESP, being head of the Department of Physiology, vice-coordinator of the Graduate Program in Nutrition at EPM, coordinator of the Research Support Office at Unifesp, member of the Technical Research Committee at Unifesp, Member of the Postgraduate Technical Committee in Life Sciences and Member of the Institutional Committee of PIBIC. Within the specific scope of the Escola Paulista de Medicina, she was vice-coordinator of the Post-Graduate and Research Chamber and is a member of the Affiliated Professor Committee. She is an international journal reviewer and associate editor of the journal "Lipids in Health and Disease". Its main area of ​​study is the physiological control of food intake by the central nervous system, effects of dietary changes, obesity disorders and molecular mechanisms of the obesity/depression relationship. She organized and edited the book "Endocrine Physiology", published in 2012. In the last 10 years she has published more than 50 papers in high-impact scientific journals and was the main advisor for 9 doctorates, 9 masters and 3 post-doctorates. She currently has research grants and advises 3 doctorates and 1 post-doctorate. She participates as a professor in all Undergraduate courses at EPM as well as teaches Post-Graduate Disciplines.

Graduiated in Nutrition from the University of São Paulo - USP (1991), with a specialization in Food Quality Management from the São Judas Tadeu University - USJT (1999), master's (1998) and doctorate (2003) in Nutrition Science from the State University of Campinas - UNICAMP and specialist in Collective Feeding by the Brazilian Nutrition Association (2012). She is currently a professor at the Federal University of São Paulo - UNIFESP with activities in the postgraduate programs in "Nutrition, Food and Health" and in "Nutrition", under an interdisciplinary perspective between collective nutrition, food science and public and public policies. She also participates of the professional master's program in Teaching in Health Sciences at the Center for the Development of Higher Education in Health - CEDESS from the perspective of Health Education. She was coordinator of the undergraduate course in Nutrition at UNIFESP, the Collaborating Center in School Food and Nutrition - CECANE UNIFESP and the postgraduate program Teaching in Health Sciences. She participates in the research group Studies in Food Quality - GEQUAL. She coordinates the Study Group: dialogues on Food Risk and Safety in Interdisciplinary Contexts Develops studies related to the themes: Knowledge, attitudes and practices; Training of handlers; Risk Perception and Food Safety in Collective Food and School Meals; Food Defense for National Security. She is a collaborating member of the Brazilian Association of Nutrition-ASBRAN and of the Technical Chamber of the Regional Council of Nutritionists-CRN-3.

She had international PhD internship at the Jean Mayer USDA Human Nutrition Research Cancer on Aging/USA. Post-doctorate at the Department of Nutrition, Faculty of Public Health, University of São Paulo and by UNIFESP. Currently, she is Adjunct Professor at Instituto Saúde e Sociedade at UNIFESP. She teaches in the undergraduate course in the modules "Nutrition and Food Preparation" and "Integrated Clinic: Care Production", and in the graduate course in the discipline "Evaluation of Food Consumption in Epidemiological Studies". Organizer and author of the book "Assessment of Food Consumption: Guide to Assessment". She works on the following topics: nutrition, nutritional epidemiology, public health, methods and tools for assessing food consumption, population nutritional analysis, nutritional micronutrient deficiency and health technologies. Graduated in Medicine (1977) at Escola Paulista de Medicina - Federal University of São Paulo, Medical Residency in Pediatrics (1979), Master in Pediatrics (1984), Doctorate in Medicine (1985) and Associate Professor in Pediatric Gastroenterology (1999). He has been a Professor in the Department of Pediatrics since 1984, initially in the Discipline of Clinical Pediatrics and since 1987 in the Discipline of Pediatric Gastroenterology. Post-Doctorate, with a CNPq scholarship, at Baylor College of Medicine, Houston, Texas (1993/1994). Currently a CNPq researcher fellow - level 1D. In the extension area, he worked intensely in the area of ​​Medical Residency, being president of the Medical Residency Committee at UNIFESP for six years (1987-1988 and 1997-2001). He was Coordinator of the Graduate Program in Pediatrics and Applied Sciences in Pediatrics (Masters and Doctorate) from 2003 to 2008, and also advisor of the Graduate Program in Nutrition, both at UNIFESP. He has experience in Pediatric Gastroenterology, and thus is currently head of the Discipline of Pediatric Gastroenterology at UNIFESP, a position also held between 1997 and 2004. Member of the Editorial Board of the Jornal de Pediatria and Arquivos de Gastroenterology. Areas of greatest interest: intestinal motility disorders, dietary fiber, intestinal iron absorption and iron deficiency, food allergy and nutritional repercussions and on the growth of digestive diseases.

She is Associate Editor of Revista de Nutrição; She participates of the Nutrition and Poverty Study Group of the Institute of Advanced Studies-USP. She is a supervisor in the Postgraduate Programs in Food, Nutrition and Health, and in the Interdisciplinary Program in Health Sciences, both at the Federal University of São Paulo; she is co-advisor in the Graduate Program in Nutrition at the Federal University of São Paulo and in the Graduate Program in Public Health at the State University of Campinas. Graduated in Nutrition from the Federal University of Pernambuco (1980), Specialization in Exercise Physiology - Federal University of São Paulo. Master's Degree in Nutrition from the Federal University of Pernambuco (1993), Doctorate in Endocrinological Sciences from the Federal University of São Paulo. Post-Doctorate researcher in Nutrition Physiology - Federal University of São Paulo. Professor at the Federal University of Alagoas since January 1982 and legal representative of NUTRIR - Association to Combat Malnutrition. She works in the physiology of nutritional disorders in children and adults and develops research on "Obesity and its comorbidities" and "Physiological and metabolic adaptations to malnutrition in early life".

She coordinates the Nutritional Education and Recovery Center - CREN, founded by her in 2007, assisting malnourished children and their families. Based on work also carried out in this population, specifically with obese and socially vulnerable women, she had articles recently accepted in international journals such as the American Journal of Human Biology, British Journal of Nutrition, Archives of Endocrinology and Metabolism and Nutrition, between 2019 and 2020. Furthermore, she was granted in 2019/2020 by the CNPQ to develop research involving iron supplementation, vitamin A and fortification of infant feeding. Awarded in 2019 as an honorary citizen of the State of Alagoas and in 2020 was nominated to receive the Mietta Santiago Medal – Silver by the Federal Chamber for the activities developed at CREN.

Associate Professor at the Federal University of São Paulo - UNIFESP, Baixada Santista campus, with activities in the undergraduate course in Nutrition, in the Interdisciplinary Graduate Program in Health Sciences, in the Graduate Program in Food, Nutrition and Health and in the Program Graduate Program in Nutrition. She is graduated in Nutrition from the University of São Paulo-USP (2004), where she also held a Ph.D. in Science in the concentration area of ​​Nutrition in Public Health (2009) and a post-doctorate in Food Science and Technology (2010). She is part of the Food Quality Study Group-UNIFESP and the Food Functional Properties research group-USP. Its activities are developed to enhance and promote the interdisciplinarity between Food Science, Nutrition and Health. Her research involves: gluten-free bakery technology; cereal technology; bioactive polysaccharides and oligosaccharides; evaluation of nutritional, physicochemical and sensory characteristics of foods; food processing and nutritional value; use of alternative raw materials; and optimization of food formulations.

Associate Professor in Food Science at the Federal University of São Paulo - Baixada Santista Campus, coordinator of the Postgraduate Program in Food, Nutrition and Health and coordinator of the Chamber of Research and Postgraduate Studies at the Baixada Santista da Campus UNIFESP. She was graduated in Food Engineering from the Federal University of Rio Grande Foundation (2001), Ph.D. in Food Science from the State University of Campinas (2006) and a Post-Doctorate from the State University of Campinas (2008). She has published 72 articles in specialized periodicals and 100 works in event proceedings. Has experience in Food Science and Technology, focusing on Food Chemistry, acting on the following subjects: natural pigments, anthocyanins and carotenoids, stability, antioxidant activity and bioavailability of pigments and natural extracts, green solvents for extractive processes and food school. She has international collaboration with research groups from Italy and Portugal.
